About RubyMac's Coffee
Where did the name RubyMac's come from?
I named my coffee trailer after my maternal grandparents, Ruby and Ranald "Mac" MacDonald as a tribute to their memory and the legacy they've left within my family. It's a way of honoring their lives and keeping their spirit alive in my own endeavors. RubyMac's Coffee will not only serve up delicious creations but also carry the warmth and connection of family history.
When will RubyMac's Coffee open?
It takes a village and through the help of my right hand man, my friends and family, and my Santa Fe community, we will be opening in the spring of 2025! Follow us on Facebook and Instagram for updates and announcements for our grand opening!
What makes RubyMac's different from the other coffee shops in Santa Fe?
In addition to being mobile and available for festivals, weddings and other events, RubyMac’s Coffee is committed to minimizing its environmental impact at every stage of its operation. By running on battery power, solar, and propane, we will reduce our reliance on fossil fuels and carbon emissions. We will also prioritize compostable and recyclable packaging, minimize food waste. This little camper may be tiny, but she is mighty!
